Ingredients
2 cup mango pulp ( four average size mango )–Alphonso or Lagra preferred,Dasheri or safeda can also be used
1 cup khoya
½ cup sugar
½ cup milk powder full cream
1 T sp + ¼ T sp ghee for barfi and greasing the tray
Tips for mango barfi
Always select well ripe mangoes . Under ripe mangoes will not give the flavour and over ripe will loose its flavour .
Have patience and cook on medium flame
Adjust sugar as per the sweetness of the mango pulp
If barfi is not getting formed add some more milk powder
Cut the barfi after 2 two hours . Let barfi get set before cutting
Decorate with fresh mango pieces while serving otherwise barfi will get spoiled .
I prefer not using any nuts as this clashes with the flavour
